I love a good salmon recipe and with all its wonderful health benefits, I try to eat it at least a couple times a week. I always feel so good after eating this hearty superfood and am thankful I enjoy it so darn much! Eating salmon so often, however, encourages a desire to mix up how I make it, so lately I’ve been pondering what to do with it next.

Since I love making seasonal dishes, sweet summer blackberries came to mind. Blackberries bring about fond memories of summers in Oregon where I spent most of my life and where you’ll find blackberries growing everywhere! Come July, there was never a need to buy them at the grocery store as there’s an endless supply in fields, parks or even on the side of the road. They’re so delicious that I can close my eyes and almost taste those sweet Oregon blackberries warmed by the sun and pulled fresh from the vine.

So, blackberries it is! I decided to make a tasty little sauce to go on top of the salmon with sweet blackberries, a little balsamic vinegar, a touch of orange juice and more. Come with me and I’ll show you how to make it.

What’s in this Blackberry Salmon Recipe?

Salmon – Choose two filets, about 6 ounces each. I bake it with the skin on, but do not eat it.

Olive Oil – The olive oil is used to bake the salmon and sauté some of the sauce ingredients.

Blackberries – Choose berries that are as ripe as possible. When ripe, blackberries will be black in color without any red, but not mushy (overripe).

Balsamic Vinegar – This adds nice acidity and flavor to the sauce.

Orange Juice and Zest – I like to use fresh orange juice and then garnish the salmon with a little zest before serving.

Honey – This adds sweetness to the sauce.

Brown Sugar – For a little extra sweetness.

Garlic – You’ll just need 1 clove.

Shallots – For a little added flavor.

Cardamom – I use ground cardamom. It adds a unique and delicious flavor to the sauce.

Black Pepper – A little black pepper is added to the salmon prior to baking.

Salt – Lightly salt the salmon before baking and add just a pinch to the sauce.

How to make this Salmon Recipe

Make the Salmon

The first thing I do is preheat the oven to 400 degrees and line a baking sheet with foil.

Next, I brush a little olive oil on the foil underneath where I’ll add the salmon, so it doesn’t stick when it’s done baking.

I then add the two salmon filets on top of the oiled foil, brush the top with more olive oil and sprinkle the salmon with a little chunky salt and pepper.

I place the salmon in the oven and bake for 14-16 minutes until the center reaches 145 degrees.

Make the Sauce

While the salmon is baking, I start on my sauce by adding the vinegar, orange juice, honey, brown sugar, cardamom, and pinch of salt to a bowl and mix the ingredients until combined.

Then, I heat about a Tbsp of olive oil in a skillet on medium heat, add the shallots and garlic to the pan, and sauté for about a minute.

Next, I add about 1 cup of the blackberries and the vinegar mixture to the skillet and begin immediately smashing the blackberries with the back of a large spoon. A serving spoon works well.

After smashing the blackberries, if the sauce is not already boiling, I bring it to a gentle boil and reduce the heat to simmer.

I then simmer and reduce the sauce for about 8 minutes, continuing to smash the blackberries and stirring occasionally.

Next, I gently stir in the last ¼ cup of blackberries and continue to cook the sauce for an additional 2 minutes, leaving the last of the blackberries whole. I love how pretty and tasty the sauce is with a few whole berries.

Garnish and Serve the Salmon

When the salmon is ready, I remove it from the oven and dish it onto the serving plates.

Lastly, I top each filet with half of the blackberry sauce. top it with a small orange slice and/or a little orange zest for garnish and dig in. Yum!

What to serve with this Blackberry Salmon Recipe

There’s a lot you can serve alongside this dish. My goal when making something like this is to make side dishes that are simple (but tasty), that allow the main dish to remain the “star of the show.” Here are a few ideas:

Salad – A green side salad with a champagne or light fruity (but not too sweet) vinaigrette works well with this recipe.

Rice – Simple white rice with a butter or non-dairy buttery spread, salt and pepper is an option. This basic side dish allows the salmon to remain part of the show.

Potato – Mashed potatoes or baked potatoes always go well with salmon. I recommend keeping potato recipes simple.

Vegetable – Asparagus is a great choice alongside salmon. Chop the ends off the asparagus and add a little olive oil, garlic, salt, and pepper. Bake at 400 for 8 minutes. Add parmesan and continue roasting for an additional 2 minutes until the cheese is melted and the asparagus can be easily pierced with a fork.

Green beans are another option that can be roasted the same way as the asparagus but will need and additional 2-4 minutes of roasting time. Just add the parmesan 2 minutes before removing it from the oven

Bread – Bread served with oil, balsamic vinegar, sea salt and pepper goes for dipping is a great accompaniment. Butter or non-dairy buttery spread with the bread is another obvious option if that’s your preference.  

Beverages – Nice red wine pairings include Malbec (my husband’s fav), Pinot Noir (there’s some great Oregon pinots), or Merlot. Ginger ale goes really well with the blackberry sauce as well. A simple sparkling water with lemon is another option.

Making Ahead and Storing Leftovers

Making Ahead – You can make the sauce ahead of time, but I recommend baking the salmon fresh.

Storing Leftovers – Store leftover salmon and sauce separately in the refrigerator. Salmon is always best fresh. I usually cook it the day I purchase it, but you can store it for 1 day. The sauce is good in the fridge for 3 days and is also great on chicken.

Reheating Leftovers – Leftover salmon and sauce can be rewarmed in the microwave. The sauce can also be reheated in a skillet.

Ingredients
  

  • 2 - 6 ounce Salmon Filets
  • 2 Tbsp Olive Oil
  • 6 ounce Blackberries ***About 1 1/4 cup
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Orange Juice
  • 1 tsp Orange Zest *** Optional - for garnish
  • 1 Tbsp Honey
  • 1 ½ tsp Brown Sugar
  • 1 Clove Garlic, Minced
  • 1 tsp Shallots, Minced
  • ¼ tsp Cardamom, ground
  • ¼ tsp Cracked Black Pepper
  • ½ tsp + Pinch Salt

Instructions
 

Make the Salmon

  • Preheat oven to 400 degrees.
  • Line a baking sheet with foil.
  • Brush the foil with a ½ Tbsp of olive oil and add salmon filets to the foiled baking sheet.
  • Brush the top of the two salmon filets with another ½ Tbsp of olive oil.
  • Sprinkle ¼ tsp of sea salt and ¼ tsp pepper between the two filets.
  • Place in the oven and bake for about 14-16 min or until the center of the thickest part of the filet reaches 145 degrees.

Make the Sauce

  • While the salmon is baking, prepare the sauce by adding the vinegar, orange juice, honey, brown sugar, cardamom, and pinch of salt to a bowl and mixing the ingredients until combined.
  • Heat 1 Tbsp of olive oil in a medium sized skillet on medium heat.
  • Add garlic and shallots to the oil and sauté for about a minute.
  • Add 1 cup of the blackberries and the vinegar mixture to the skillet and begin smashing the blackberries with the back of a large spoon (a serving spoon works well).
  • Bring to a gentle boil and reduce heat to simmer for about 8 minutes, continuing to smash the blackberries and stirring occasionally.
  • Gently stir in the last ¼ cup of blackberries and continue to cook the sauce for an additional 2 minutes, leaving the newly added blackberries whole.
  • Garnish and Serve the Salmon
  • Remove the salmon from the oven when it reaches 145 degrees.
  • Plate the salmon and top each filet with half of the blackberry sauce.
  • Add a little orange zest for garnish. ***Optional
  • Serve and enjoy!

If you haven’t had a sauteed zucchini and yellow squash recipe, I highly recommend you get on the bandwagon. Not only are these summer squashes extremely nutritious, but they’re also quite tasty when prepared properly! In fact, my hubby thought he didn’t like zucchini until I prepared this simple recipe for him and I’m proud to say he now actually requests it!

What’s in this Recipe?

Zucchini – Pick out a zucchini that has nice shiny green skin and is without bruises or too many blemishes. Avoid squash that is light weight or bends easily as it’s past it’s prime. You’ll want it to have a little weight to it and not be too big (under 8 or 9 inches).

Yellow Squash – I like to get straight neck yellow squash as the width is often similar to zucchini. Crooked neck yellow squash works well too, just cut it into small pieces when prepping as the body is more bulbous. Suggestions for picking out a nice yellow squash are the same as picking out a zucchini except you’ll be looking for nice yellow skin instead.

Olive Oil– You’ll sauté the squash in the skillet with olive oil.

Seasoning – There are a lot of options for seasoning. This recipe is a staple in our home and this is a great seasoning combination for the squash:

      • Garlic Powder
      • Onion Powder
      • Chili Powder
      • Paprika
      • Parsley Flakes
      • Cracked Black Pepper
      • Salt

How to make this Zucchini and Yellow Squash Recipe

First, I rinse and dry both squashes well.

Then, I chop the ends off and throw them away.

Next, I cut both the zucchini and yellow squash into “coins,” about a quarter inch thick. If there are larger piece, I chop them in half again creating “half coins.” My goal is to make the pieces somewhat close to the same size.

After all the chopping is done, I add all the seasoning to a small bowl and mix it together.

Next, I heat the olive oil in a medium-sized skillet on medium heat.

When the oil thins out and moves around the pan quickly and easily, but before it smokes, I add the squash. I quickly stir and spread out the “coins.”

Then, I quickly add the seasoning evenly over the squash and stir, shake and flip the pieces for a few minutes.

Next, to make sure it’s done, I pierce a piece or two of each squash with a fork. The fork should go in easily, but the squash should still have some structure to it (you do not want it to be mushy).

Lastly, I plate it up and dig in to this healthy and appetizing little squash recipe or add it to whatever else I’m making.

What Goes Well with Zucchini and Yellow Squash Recipe?

Meat and Potato or Rice – This simple side dish goes well alongside your favorite Steak, Pork, Poultry or Fish. Add a potato or rice and you have a complete meal.

Chicken, Beans and Rice Bowl – Make an easy lunch or dinner bowl by adding the squash to a bowl with shredded or cubed chicken, red or black beans and white or brown rice. Top the bowl with a favorite sauce or salsa that you have on hand and VIOLÁ, you have an easy and tasty meal.

Burrito – Add the squash to a burrito with ground taco meat and Spanish rice. Top with hot sauce, sour cream and/or guacamole for a delicious lunch or dinner. Pair the squash with eggs and cheese and hot sauce to make a breakfast burrito.

Making Ahead, Storing and Reheating Leftovers

Making Ahead

The squash is quick and easy to make, so I recommend serving it freshly cooked. I often chop the squash ahead of time or chop extra when making it and store it in a baggie in my vegetable drawer in the fridge. It stays fresh for a week plus.

Storing Leftovers

Although this side dish is best served fresh, you can safely store leftovers in the fridge for up to three days. Freezing the cooked squash is not recommended.

Reheating Leftovers

Leftovers can be rewarmed in the microwave. The amount of time needed to reheat the squash varies depending on how much you have leftover but be conservative on the amount of time you choose to maintain the best possible texture and avoid overcooking.

It’s still blazing hot outside here in Phoenix and this heat has me craving cold sandwiches and light salads. I mean, what’s better on a hot day than some juicy pineapple? This chicken salad recipe radiates summer with its refreshing, chilled ingredients, and impeccable flavor combination.

You’ll love this chicken salad as a sandwich on your favorite gluten free white bread or atop a bed of lettuce as a green salad. Are you or others able to have gluten? If so, my husband reports that this recipe is excellent on either a buttery croissant or Hawaiian sweet bread.

What’s in this Chicken Salad?

Chicken Breast – Cooked and either cubed or shredded chicken works well in this salad.

  • Speed it up: Check your grocery store for pre-cooked and shredded rotisserie chicken if you’re in a hurry.

Pineapple – Fresh is always best! Make sure the pineapple chunks are a decent size (maybe ½ – ¾ inch). Smaller chunks get a little lost in the salad and you miss out on the taste.

  • Speed it up: Canned pineapple chunks will work in a pinch. Also, sometimes grocery stores will have containers of chopped fresh pineapple in their produce section.

Macadamia Nuts – Chopped macadamia nuts go so well with the pineapple and add a nice crunch to the salad.

  • Change it up: If you’re looking to save your pennies or do not like macadamia nuts, try almonds or pecans.

Celery – This classic chicken salad ingredient goes well with everything and just like the macadamia nuts, adds nice texture.

Fresh Mint – You’ll love how the mint pairs with the pineapple. It’s a fresh and tasty combination!

Yogurt Mixture:

Vanilla Yogurt – I use a light vanilla yogurt in this recipe.

  • Change it up: Use a non-dairy yogurt if you are dairy free. There are a lot of options for a yogurt base depending on your preference including soy, coconut and more. Also, plain yogurt works fine, just add a little extra honey.

Honey – I love using honey as a sweetener instead of refined white sugar.

*** Did you know raw honey has antibacterial and antifungal properties and is even anti-inflammatory?

Apple Cider Vinegar – Love the little bit of subtle zip this adds!

Lemon Juice – Fresh is always best!

  • Speed it up: Although I always love fresh juice, bottled lemon juice works fine too.

Cinnamon – The cinnamon is so nice with the pineapple – yum!

Brown Sugar – For a little extra added sweetness.

Salt – Just a little to help bring out the flavors.

Other Ingredients:

Butter Lettuce – The mild buttery taste of this lettuce is great with the chicken salad.

Bread – If you are making sandwiches, choose your favorite gluten free white bread.

How to make the Chicken Salad

The first thing I do is add the light yogurt to a large bowl and mix in the sweet honey, tangy apple cider vinegar and lemon juice.

Next, I mix in the cinnamon, brown sugar and salt and take a little taste because it looks so good!

I then remove about a quarter cup of the yogurt mixture and put it in the fridge. This will eventually be used as extra spread if I’m making sandwiches or dressing for a green salad.

Then, I add the cooked chicken breast, juicy pineapple, macadamia nuts, celery, and fresh chopped mint to the yogurt mixture and mix it all together until everything is coated well.  

Next, I cover and chill the chicken salad for at least 1 hour.

If I’m Making Sandwiches

When I’m ready to make the sandwiches, I lightly toast the bread and spread about a half tablespoon of the extra yogurt mixture on each piece of bread.

Then, I remove the chicken salad mixture from the fridge last minute so it’s as chilled as possible when serving.

Lastly, I place a large piece of butter lettuce on half of the bread slices and chicken salad mixture on the other slices and put the opposing sides of the sandwiches together. I slice the sandwiches from corner to corner and dig in. Yum!

If I’m Making a Green Salad

First, I rinse, dry, and chop a head of butter lettuce and place it in a large serving bowl.

Next, I grab the extra yogurt mixture and toss it with the butter lettuce, coating the leaves as evenly as possible.

Then, I top the salad greens with the chicken salad mixture. My husband LOVES the sweetness level of the chicken salad, and so do I, but I like to serve this salad with a light drizzle of a champagne or lemony vinaigrette to add a little tanginess.

What to serve with this Pineapple Chicken Salad

If Served as Sandwiches

Potato Chips – Simple salted potato chip goes well with this sandwich.

Coleslaw – Fresh, light coleslaw is another option to serve with it.

Green Salad – A small side salad with a light dressing is a great choice as well.

If Served as a Green Salad

Bread – This salad is great with your favorite bread. Serve the bread with butter or olive oil with salt and pepper. If you are not gluten free, Hawaiian sweet rolls are great with this salad.

Making Ahead & Storing Leftovers

The chicken salad is best when made ahead and chilled for at least one hour and up to 24 hours.

Storing Leftovers

Store leftover chicken salad on its own covered and in the fridge for up to 48 hours. Avoid making the sandwiches or green salad until you are ready to eat them.

  • ¼ Cup Macadamia Nuts, chopped

  • ¼ Cup Celery, chopped

  • 1 ½ tsp Honey
  • 1 ½ tsp Apple Cider Vinegar
  • 1 ½ tsp Lemon Juice

  • ½ tsp Brown Sugar

Ingredients if Making Sandwiches

  • 8 Slices of Gluten Free White Bread If not gluten free, butter croissants or Hawaiian sweet bread are great options
  • 4 Large Butter Leaves

Ingredients if Making Green Salad

  • 1 Head Butter Lettuce, rinsed, dried and chopped
  • ***Optional Champagne or Lemony Vinaigrette

Instructions
 

  • Add the light yogurt, honey, apple cider vinegar and lemon juice to a large bowl and mix ingredients together by hand. *** If you are not using light yogurt, use less honey and/or brown sugar so the mixture is not too sweet.
  • Stir in the cinnamon, brown sugar, and salt until well combined.
  • Remove ¼ cup of the yogurt mixture and set aside.
  • Add the cooked chicken, pineapple, nuts, celery and mint to the yogurt mixture.
  • Chill the salad and extra yogurt mixture for at least 1 hour.

Directions for Sandwiches

  •  Lightly toast 8 slices of bread.
  • Remove the salad and extra yogurt mixture from the fridge.
  • Spread about ½ Tbsp of the extra yogurt mixture on each slice of bread.
  • Place a large piece of butter lettuce to one side of each sandwich (4 of the slices).
  • Add ¼ of the chicken salad to each of the other 4 slices of bread.
  • Stack the bread slices with the lettuce on top of the slices with the chicken salad to make the sandwiches.
  • Slice each sandwich in half from corner to corner.
  • Serve and enjoy!

Directions for a Green Salad

  • Rinse ,dry and chop one head of butter lettuce and place in a large service bowl.
  • Toss extra yogurt mixture with the lettuce.

Quick and Easy Papaya Recipe with Yogurt, Lime and More!

This easy papaya recipe is simply scrumptious with its sweet honey, creamy yogurt and more. It’s healthy and delish!

If you haven’t had papaya, it’s a lovely tropical fruit that’s sweet, juicy, and delightful. It’s not something I grew up eating but discovered at a small little grocery store on the “Big Island” of Hawaii our first time visiting. As we sat on our lanai enjoying the warm gentle breeze and pleasant mountain views, we dug into our papaya and fell in love with this wonderfully nutritious fruit.

In an effort to beat post-vacation blues  upon arriving home to the cold and rainy weather where we lived at the time, I began to incorporate some of the foods we enjoyed on the trip and papaya was no exception. There’s a lot you can do with a papaya, but today I’ll show you a tasty recipe that’s perfect for a healthy, low-calorie breakfast or lunch.

How to Pick out a Papaya

There are many varieties of papaya and what I see most often in grocery stores in the U.S. are large Mexican (Maradol) papayas or small Hawaiian papayas. Both turn from their unripe green color to a golden/yellow color when ripe. They are also slightly soft when ripe but avoid fruit that is too soft or browning as they may be overdone.

*** On a side note, if you are ever in Hawaii or other places that grow Strawberry papayas, make sure to grab one as they are super sweet and juicy and have an incredible flavor!

What’s in this Papaya Recipe

Papaya – I used half of a large Mexican papaya to serve two. Hawaiian papayas are smaller and a whole papaya serves two.

Yogurt – Light coconut flavored yogurt is my go-to for this dish. I love how well it goes with the papaya.

  • Change it up: Vanilla yogurt is another great choice. Pineapple yogurt adds a little bit of sweetness with a hint of tart. Non-dairy yogurt can be used for those of you that are dairy-free.

Honey – I drizzle a small amount of honey over the top for a little added sweetness.

Granola – I use gluten free granola and I love how it adds a nice crunch on top.

  • Change it up: Honey roasted or candied pecans or walnuts are a delicious topper as well.

Lime Juice – I mix this in with the yogurt before adding it to the papaya.

Lime Zest – If you haven’t noticed in my other recipes, I love citrus zest for the flavor and because adds so much to the presentation of a dish! I love how the lime pairs with the papaya.

How to make this Papaya Recipe

  • First, I cut the papaya in half lengthwise and gently scoop out the seeds. When ripe enough, the papaya is soft and juicy, so I like to do this carefully to avoid scraping out any of the delicious fruit. I’m them left with sort of a papaya “bowl” that’s perfect for holding the rest of the ingredients. 
  • Next, I add the yogurt to a medium-sized bowl and squeeze in a little tangy lime juice. I mix the two ingredients together well. 
  • Then I add the yogurt mixture to the papaya “bowl.”

  • After adding the yogurt, I drizzle some sweet and delicious honey back and forth over the top of the fruit and yogurt.
  • Next, I’ll crumble up the granola and sprinkle it on top.
  • Then, I’ll top it off with some pretty and tangy lime zest as a garnish. *** If you have an orchid on hand, add one little flower as it makes for a beautiful addition for serving this pretty papaya recipe.
  • Finally, I sit down and let this tasty dish transport me back to beautiful, lush Hawaiian views and breezes – YUM!

Making Ahead and Storing Leftovers

This papaya recipe is quick and easy to make fresh, but if you’d like to make it ahead, just leave the granola off until you are ready to eat it, so it doesn’t get soggy and maintains that yummy crunch.

If you can, prepare only what you’ll consume, but leftovers can be stored safely in the fridge for 1-2 days, depending how ripe your fruit is. Keep in mind that the granola likely won’t have that nice crunch, so throw a little extra fresh granola on top when eating the leftovers for optimal enjoyment! 😊

Ingredients
  

  • ½ Large Papaya or 1 Whole Small Papaya
  • 10-12 Ounces Light Coconut Flavored Yogurt ***Equivalent to 2 Single Serving Yogurts
  • ¼ Cup Cup Granola
  • 1 tsp Honey
  • ½ tsp Lime Juice
  • ½ tsp Lime Zest

Instructions
 

  • Cut the papaya in half lengthwise. ***If using a large papaya, refrigerate the other half.
  • Gently scoop the seeds out and discard, creating a papaya “bowl.”
  • Add the yogurt and lime to a medium-sized bowl and mix the ingredients together until well combined.
  • Scoop the yogurt mixture into the papaya “bowl.”
  • Drizzle the honey over the top of the papaya and yogurt using a back-and-forth motion.
  •  Sprinkle the granola over the top of the fruit and yogurt.
  • Garnish the dish with the lime zest.
  • Serve and enjoy!

The greatest thing about it being so darn hot outside is there’s so many fun ways to cool off! Depending on where you live, summertime offers either the best weather ever, or the worst of the worst (super sweltering Arizona and seriously sticky Florida – I’m looking at you!).

Either way, most of us are looking for how to stay cool in hot weather so we can enjoy our summer. I’ve got all sorts of ideas for you! Come with me and we’ll look at some ways to enjoy the warm (or extremely toasty) heat. There’s something for everyone!

Enjoy the Water

There are so many ways to stay cool in hot weather and enjoying the water is at the top of my list of fun. Make sure to touch up on water safety tips with any of the below suggestions to keep everyone safe and having a good time!

Head to the Pool

Check your area for pools open to the public. Recreation or Aquatic Centers are found in many cities and a great option for the whole family.

Gyms with pools are another option that offer in or outdoor pools for their members. Swimming laps and aqua aerobics are great ways to get in shape and easy on the body.

If you’re lucky enough to own a pool, look for a new pool float with cup holders for an ice-cold beverage or pool games for the kiddos.

Do you have resorts in your area? Look for resort day passes for access to their pools for guests not staying on property.

Head to the Lake

Another option for cooling off in the water is heading to the lake and some have great beaches for swimming to cool off on a hot day. Another thing to consider is renting a boat and trying your hand at tubing, water skiing or wakeboarding, depending on the age group of your party.

If you haven’t tried stand up paddleboarding, this is another great option! You can choose to sit and relax or stand and work on your balancing skills, which is usually a great way to cool off, haha.

Head to the River

Another fun option is floating the river in an innertube. Single or tandem innertubes are available, depending on your needs and desires. Some rivers even have shuttle buses in popular areas that’ll take you back to your car at the end of your float for a small fee.

Also, a fun river sport for cooling off in the summer heat is white water rafting. There are different classes of rapids to suit various skill and comfort levels, including tours for beginners, so check with local tour companies.

Head to the Ocean

Some coastlines inherently have cooler ocean breezes allowing you to relax in the sand while enjoying the water views and soothing sounds of the ocean from your comfy beach chair.

Others offer warm air with inviting water for activities like bodyboarding. Snorkeling is a blast, especially in areas that boast interesting underwater wildlife. If you’re feeling adventurous and want a good workout, book a surf lesson and ride the waves.

Head to the Water Park

Water parks are great for the whole family. Cabana rentals are often available for relaxing in a comfortable shaded area. Wave pools and lazy rivers offer a good time for all.  Some also have splash pads and other amusement for small children. I haven’t forgotten about waterslides, which are often the highlight of many water parks. Waterslide intensity varies from chaotic and crazy to short and sweet. There’s something for everyone, making this option a perfect way to beat the summer heat.

Enjoy Water Toys or Games

There’s a lot of ways to keep children cool and entertained at home in the heat of summer. Water balloon fights are a lot of fun and they now make hose attachments that allow you to fill up multiple balloons at once.

Don’t forget about the infamous slip and slide. You can find models that have body boards to soften the blow (and lesson the injuries) when taking off down the slide.

Finally, let’s not forget about the sprinkler! Running through the sprinkler is a classic summer activity that keeps kids amused and having a great time in the summer heat.

Enjoy Refreshing Food/Beverages

Consume lightweight food and drinks to stay cool this summer. There’s a lot of options out there, so take a peek below for some “cool” ideas.

Enjoy Chilled or Frozen Treats

Take an outing to get your favorite ice cream or gelato. Frozen yogurt shops are another fun option and usually have lots of exciting and interesting options for toppings from fruit and nuts to candy, marshmallows, chocolate, caramel and more.

Fresh chilled watermelon is always a great summer treat or try freezing grapes or blueberries to munch on in the heat. They’re delightful!

Enjoy a Chilled Beverage

Treat yourself to an ice-cold beverage to cool off at the core. Try fruit infused water by simply adding citrus or pineapple and mint. Sparkling water with lemon is another great choice. Adding fruit to your water offers natural electrolytes that help keep you hydrated and feeling good in the heat.  

Lemonade’s another refreshing choice. Add some muddled strawberries or raspberries to your lemonade for a little extra flavor.

A tropical cocktail or ice-cold beer is always a fun choice while sitting on a sandy beach or by the pool, just make sure to stay hydrated!

Enjoy Indoor Air-Conditioned Activities

Don’t fret if it’s just too hot to be outside and you’re still not sure how to stay cool in hot weather! There’s a lot of fun to be had indoors in the A/C! Let’s look at a few ideas.

Head to an Escape Room

Use your puzzle solving skills in an escape room. You’ll be placed in a locked room and work together with others in your party to solve a series of puzzles to make your escape in a predetermined amount of time.

Head out for Some Indoor Mini Golf

Cool off inside while enjoying a little friendly competition playing some indoor mini golf. Some locations even have glow in the dark courses for added fun.

Head to the Bowling Alley

Venture over to your local bowling alley for some family-friendly fun in the cool air. Grab a cold soda and work on turning those spares into strikes.

Head to the Mall

Find an indoor mall and do a little shopping in the A/C. If your shopping list is empty, grab a friend and do some window shopping. You’ll enjoy quality time with a buddy and get your steps in for a little exercise.

Enjoy Higher Elevation

When it’s just plain hot at home and you feel like getting out of dodge, finding higher elevation usually means lower temperatures.

Head to the Mountains

Heading to higher elevation often allows you to be outside at more comfortable temperatures when it’s scorching down the big hill. Pitch a tent or rent a cabin and make it a weekend evet. Go for a hike or nature walk and get some exercise.

Perseids is a meteor shower visible in the Northern Hemisphere that peaks around Aug 11th-13th and is incredible to watch, especially in higher elevations away from city lights. Head outside and look up once it’s completely dark for a spectacular show of meteors streaking across the sky.

Easy Healthy Homemade Popsicles with Mango and Blueberries

These healthy homemade popsicles are the perfect guilt free, sweet and refreshing summer treat with blueberries, honey, mango and more!

Something about the current 110-degree Arizona heat has me craving nothing other than ice cold popsicles. A recent cruise through the neighborhood by the ice cream man playing his nostalgic twinkly music had my husband and I jumping on our bikes like children chasing him down for a sweet summer indulgence.

We managed to catch up with him and each chose our tasty treats, but the moment had me wanting to make something extra tasty and a little sweet but lacking in guilt. Thus, I decided to make a healthy homemade popsicle.

So, if you haven’t noticed yet, I just LOVE blueberries! They are so good this time of year and they’re one of the healthiest fruits out there, so of course, they made it into my popsicle. The blueberries in this recipe don’t just give the recipe great flavor, but a dreamy and creamy purple color too.

Sweet mangoes and creamy coconut always have me dreaming of lazy beach days in tropical locations and to me they just scream summer. They go so well with blueberries, so I threw them in too.

I wanted to add a touch of extra sweetness and flavor, so honey and vanilla also made their appearance in this frozen summer treat as well.

Finally, I added a little bit of lemon to round out the flavor and insert a tiny bit of tartness with the sweetness of this bright little popsicle.

Why You’ll Love these Healthy Homemade Popsicles

  • They’re extremely refreshing on a warm summer’s day.
  • You’ll love the sweetness of the fruit paired with the creaminess of the coconut milk.
  • Honey and vanilla take the flavor to the next level.
  • Juicy lemon cuts the sweetness just right and adds a subtle zip to the flavor of the popsicle.
  • They’re healthy and easy to make!

What’s in these Delightful Popsicles

Coconut Milk – I use canned light Thai coconut milk for these healthy homemade popsicles.

    • Change it up: If you want something extra creamy and don’t mind a few extra calories, try these with the full fat coconut milk.

 

Mango – Most mangoes work well in this recipe. This time I chose the sweet and ever-so-delicious red mango.

***When picking out a mango, choose one that is slightly soft to the touch. If it’s too firm, it’s underripe and if it’s too soft, it’ll likely be brown inside. The red mango is green before ripe and turns partially, to mostly red when ripe.

 

Blueberries – I often find blueberries are best during the summer when they are in season (like many fruits). If you have access to summer blueberries from Oregon, they are delicious! Do you have extra tasty blueberries in the summer where you’re at? Let me know in the comments!

Lemon Juice – I like to use freshly squeezed lemon juice. A small lemon should give you all the lemon you need and then some for this recipe.

  • Change it up: Lime works well in this popsicle too!
  • Speed it up: If you’re in a hurry or don’t have lemons on hand, bottled lemon juice works just fine!

Lemon Zest – For a little extra lemony flavor.

  • Change it up/Speed it up: You can leave this ingredient out if you don’t have a lemon on hand or if you’re in a rush.

Honey – This adds a little extra sweetness to the popsicle and I love the flavor of this all natural sweetner.

Vanilla – For a little added flavor.

How to make these Healthy Homemade Popsicles

1. Add all ingredients to a blender.

2. Blend on medium speed until all ingredients are well combined.

3. Pour the mixture carefully into your popsicle mold, leaving a little room at the top so they don’t spill over when adding the sticks.

4. Add the sticks to the popsicles and freeze for 4 hours.

5. Serve and enjoy! *** Depending on the type of popsicle mold, you may need to place the popsicle mold in hot water for a minute or two in order to remove them from the mold.

Storing the Popsicles

The popsicles can be stored in the freezer for up to a month. If you are storing them for more than a week, I recommend removing them from the popsicle mold and wrapping them individually in plastic wrap or baggies to prevent freezer burn and keep them tasting fresh for longer.

  • Popsicle Mold This recipe uses a mold with 6 - 6 oz popsicle molds

Ingredients
  

  • ¾ Cup Lite Thai Coconut MIlk
  • 1 Cup Blueberries
  • 1 Cup Mango, peeled and chopped ***I used one Red Mango to get 1 cup
  • 2 Tbsp Lemon Juice, fresh squeezed
  • 1 tsp Lemon Zest ***Optional
  • 1 ½ Tbsp Honey
  • 1 tsp Vanilla

Instructions
 

  • Add all ingredients to a blender.
  • Blend on medium speed until all ingredients are well combined.
  • Pour mixture carefully into popsicle mold, leaving a little room at the top so they don’t spill over when adding the sticks.
  • Add sticks to the popsicles and freeze for 4 hours.
  • Serve and enjoy! *** Depending on the type of popsicle mold, you may need to place the popsicle mold in hot water for a minute or two to remove them from the mold.
