Many farms have stores with fall décor or fresh produce to take home too, so don’t miss out on a little shopping hand in hand.

Finally, don’t forget that pumpkin patches have tasty treats. Share some farm fresh corn on the cob, cider donuts, or pumpkin fudge while you’re there.

3. Watch a Fall Movie

Head to the theater for a newly released spooky movie this Halloween season or cozy up on your comfy couch and see if the Great Pumpkin finally joins Linus in the pumpkin patch this year in It’s the Great Pumpkin, Charlie Brown. Simple Pumpkin Dip with Cinnamon and Sweet Maple

Simple Pumpkin Dip with Cinnamon and Sweet Maple

symbols for gluten free, dairy free option and egg free

This rich and creamy pumpkin dip will have you relishing in fall delight with its sweet maple and warm spices.

prepared pumpkin dip in white pumpkin-serving bowl with apple slices on mini wood cutting board and cookies in white bowl

I was so excited to make this pumpkin dip to share with y’all and it really has me getting into the fall spirit. Coming off the hottest July on record in the Phoenix area, I’m CRAVING “autumn leaves and pumpkins please!” For now, I can thank my air conditioner for crisp air, haha, and Youtube for their “fall ambiance” videos.

So, let’s talk about this pumpkin dip. It’s SO good, you guys. It’s something you can make if you’re craving a tasty snack or dessert, or it’s great for upcoming fall and holiday shindigs. It’ll be a hit with your guests! So come with me and I’ll show you why you’ll love it, what’s in it, how to make it and more!

Why You’ll Love this Pumpkin Dip

  • It’s the perfect treat for your Halloween, Thanksgiving or Christmas gathering.
  • This dip is super creamy and delicious.
  • You’ll love the traditional pumpkin and warm autumn spice combination.
  • Maple adds delightful flavor and just the right amount of sweetness.
  • It’s quick and simple to make.

What’s in the Dip?

Cream Cheese – You’ll want this softened, so it blends well with the other ingredients. This is the creamy base for the dish and helps give the dip its rich texture.

    • Change it up: Use a non-dairy cream cheese spread or non-dairy plain yogurt for dairy free.

Frozen Whipped Topping – This is part of the base of the dip and lightens up the texture a bit. I like So Delicious brand’s Coco Whip, which also happens to be dairy free.

Pumpkin Puree – This is the seasonal star of the autumn show! I used canned pumpkin puree. ***Make sure to get puree and NOT pumpkin pie filling.

Maple Syrup – This adds nice flavor and sweetness to the dip.

Vanilla – For a little added flavor richness.

Brown Sugar – for a little extra sweetness.

Spices – I use cinnamon, ginger, nutmeg, and cloves in the dip.

    • Change it up: Although I prefer the spices listed above and proportions in this recipe, pumpkin spice works well too if that’s what you have on hand!
pumpkin dip ingredients in glass bowls and decorative pumpkin serving dish

How to make the Pumpkin Dip

First, I remove the cream cheese from the fridge 30 min to an hour before making the dip.

When I’m ready to make the dip, I add the cream cheese, frozen whipped topping, pumpkin puree, maple syrup and vanilla (wet ingredients) to a mixing bowl. I use my stand mixer for this, but a hand mixer is fine too.

Then, I mix the ingredients on medium-low for about a minute, and then on medium for an additional minute.

Next, I add the brown sugar and spices and mix on medium-low for another minute or two.

I pop it in the fridge to chill for about an hour before serving.

Finally, I dig into this absolutely divine treat and experience autumnal bliss!

It’s that easy folks! 😊

What to serve with the Pumpkin Dip

Apples

Apple slices are wonderful with this dip and there are many types of apples that work well with this dip. Honeycrisp is a perfect match in my opinion. Gala apples are another recommended choice.

Pears

Pear slices are another great choice. I like the classic Bartlett or green D’anjou pears with this dish.

Cookies

Mildly sweet cookies like vanilla wafers or coconut crips are excellent with the dip, just make sure whatever cookie you choose is lower in sugar since the dip is already sweet. For my gluten free friends, vanilla wafers and coconut crisps can often be found gluten free.

Graham Crackers

Graham Crackers are another great choice for dipping as they are usually not overly sweet. There are a few gluten-free options out there for graham-style crackers as well.

Making Ahead & Storing Leftover Pumpkin Spice Dip

Making Ahead

This dip is excellent made ahead and chilled before serving! The flavors blend and the texture is nice when chilled. Make sure to consume the dip within 3-4 days of making it.

Storing Leftovers

Leftovers can be stored in the fridge for 3 – 4 days. I recommend storing it in a glass container with a lid.

Thank you for making this delightful pumpkin dip! Let me know if you served it at a party or ate it for a snack in the comments below.

Ingredients

  • 8 Ounces Cream Cheese, softened *Use non-dairy cream cheese spread for dairy free
  • 1 ⅔ Cup Frozen Whipped Topping *Use non-dairy frozen whipped topping for dairy free
  • 1 Cup Pumpkin Puree, canned *Make sure NOT to use pumpkin pie filling
  • 3 Tbsp Maple Syrup
  • 1 ½ tsp Vanilla
  • 2 Tbsp Brown Sugar
  • 1 tsp Cinnamon
  • ¼ tsp Ginger
  • ¼ tsp Nutmeg
  • ¼ tsp Cloves
  • Apple/Pear Slices, Graham Crackers, or Lightly Sweetened Cookies to Serve with Dip

Instructions

  • Add the wet ingredients (softened cream cheese, frozen whipped topping, pumpkin puree, maple syrup, vanilla) to a large mixing bowl.
  • With a hand or stand mixer, mix the wet ingredients on medium-low for one minute and then medium for an additional minute or until the ingredients are well combined.
***Quick tip: if you did not allow the cream cheese to soften and the dip looks lumpy, a good food processor can fix this on a “puree” setting.
  • Add the dry ingredients (brown sugar, cinnamon, ginger, nutmeg, cloves) to the wet ingredients and mix on medium-low for a minute or two until the sugar and spices are well incorporated.
  • You can serve this right away, but I recommend chilling it for one hour before serving to let the flavors blend and give the dip structure.
  • Serve with apples or pear slices and/or vanilla wafers or other cookies that are not overly sweet.

How to Decorate a Festive Lantern for Fall

How to Decorate a Festive Lantern for Fall

These festive lantern ideas for fall are perfect for adding warm autumn ambiance to your home or office space.

Festive Fall Lantern Decor - lantern with white candle surrounded by fall leaves with decorative fall stem hanging from top

I have a few festive lanterns that I keep up year-round in my home, and what makes them festive is decorating them for the current season or holiday. It’s so easy and with fall arriving, I can’t WAIT to get out my decorations. Living in the desert, we don’t get a lot of natural fall beauty, so we create it ourselves. We do have a little fall color if you drive outside of Phoenix to higher elevation, but if you plant a color changing tree in Phoenix it gets confused and starts changing in December, haha.

So, with this extremely cozy and delightful time of year approaching, I thought I’d kick off the season with this fun and simple decoration that’ll add ambiance to any humble abode. Come with me and I’ll show you why you’ll love a festive lantern, what you’ll need, where to find what you’ll need, how to put it together, and where to display it.

Why You’ll Love a Festive Lantern Decorated for Fall

  • You’ll love how quick and easy it is to put together.
  • A lantern decorated for fall adds ambiance to any space.
  • You can display the lantern year-round and change just a few elements each season.
  • There are many ways to add your own creative touch.

What You’ll Need to Decorate a Festive Lantern for Fall

Base Pieces:

Lantern/s

Maybe you already have some lanterns in your home, but if not, there are many options out there. I recommend finding styles that are neutral so they can be incorporated into your everyday décor. With endless styles to choose from it’ll be easy to find a color and style that goes with your existing décor.

festive lantern items - lantern, fall leaves and stems, lights, ribbon, candle, mini orange pumpkin

Seasonal Décor Options:

Candles or Lights

Depending on how you plan to decorate your festive lantern, you can choose decorative miniature lights or a candle for ambiance. If you decide on decorative lights, battery operated are best, so you don’t have a cord coming out of the lantern. As for candles, a simple white color is a classic choice or candles in red, orange and gold are fitting for the season. You can also find candles in various fall shapes or patterns like pumpkins, leaves, ghosts and more. Consider battery operated candles if you’d like your candle to glow, as it’s always the safer choice.

Fall Leaves and Stems

Autumn Leaves in colors of brown, red, orange, and yellow are great for the season. You’ll find various fall stems with berries, wheat, leaves, pumpkins, acorns and more.

Pumpkins and Gourds

Miniature pumpkins, faux or real are a fun choice for decorating your festive lantern. Little gourds in oranges, reds, greens, and yellows are other great options.

Ribbon

Stores often have ribbon in various fall patterns and colors this time of year. Opt for a wired ribbon to give your bow a nice shape. You can also find premade bows this time of year in the seasonal section at your local store.

Where to Find a Lantern and Décor

Craft Stores, home stores, big box stores and online retailers are a few places that offer home décor like lanterns, candles, and lights. These types of retailers also carry seasonal décor including leaves, faux pumpkins, fall ribbon and more.

How to Decorate a Festive Lantern for Fall

There are so many ways to decorate a festive lantern, but let me show you a couple of simple ideas:

Festive lanterns with white candle surrounded by fall leaves with decorative fall stem hanging or orange ribbon on top

Option 1

  1. Place candle at the base of the lantern in the center.
  2. Surround the candle with fall leaves.
  3. Add a fall stem or ribbon to the top of the lantern.
  4. Display and enjoy!
festive lantern in black and filled with sparkly orange pumpkins and battery operated lights

Option 2

  1. Using an enclosed lantern with a door, lay the lantern on it’s back, open the door and fill with pumpkins, gourds, fall leaves, or any combination of the three.
  2. Weave battery operated lights throughout the décor inside the lantern, hiding the batteries where you have reasonable access to turn it on and off.
  3. Display and enjoy!

These are just a couple of options. Take a stroll through the seasonal section at local stores or peruse online for endless Halloween, Thanksgiving, and other fall decorations to display in your festive lantern. Get creative with it and design something that you can enjoy all season long.

Where to Display Your Festive Lantern/s

Front Porch

Create a welcoming fall scene on your front porch! Surround your festive fall lantern with leaves and pumpkins on top of mini hay bales. Put up some lights or garland. Add a fall wreath with lights to your door and a festive door mat.

On the Wall

Hang your lantern on the wall in a space that needs some extra pizazz. If you have two lanterns, place them on either side of your television or a piece of wall art for a pleasant look.

Counter or Kitchen Island

Decorated lanterns look great on kitchen islands. You can also place one on the kitchen counter in a corner for a nice look. They also go well on bathroom counters between two sinks or in a corner.

Console Table

Display your lantern on a console table near your entryway or in living rooms or dens. Make them part of a larger display, surrounded by other fall décor to add to the overall look.

Shelf

Shelves are another great place to display your festive lantern. Place it near some stacked books with a pumpkin on top or next to a picture of the family at the pumpkin patch.

Tabletop

Make festive lanterns a part of your in or outdoor tablescape. It’s great as a centerpiece on its own or surrounded by other décor. Keep it up all season long or enjoy it for Halloween or Thanksgiving.

Desk

Warm up your office space by placing the lantern on your desk where you’ll enjoy it while you work. I don’t know about you, but I do my best work when I clear the surrounding clutter and work in a pleasant space!

Best Baked Salmon Recipe with Blackberry and Honey Sauce

Best Baked Salmon Recipe with Blackberry and Honey Sauce

symbols for gluten free, dairy free and egg free

This salmon recipe is simply divine with its luscious honey blackberry sauce, cardamom and a touch of orange.

Baked Salmon with Blackberry Honey Sauce - prepared salmon with blackberry sauce on plate garnished with orange slice and zest

I love a good salmon recipe and with all its wonderful health benefits, I try to eat it at least a couple times a week. I always feel so good after eating this hearty superfood and am thankful I enjoy it so darn much! Eating salmon so often, however, encourages a desire to mix up how I make it, so lately I’ve been pondering what to do with it next.

Since I love making seasonal dishes, sweet summer blackberries came to mind. Blackberries bring about fond memories of summers in Oregon where I spent most of my life and where you’ll find blackberries growing everywhere! Come July, there was never a need to buy them at the grocery store as there’s an endless supply in fields, parks or even on the side of the road. They’re so delicious that I can close my eyes and almost taste those sweet Oregon blackberries warmed by the sun and pulled fresh from the vine.

So, blackberries it is! I decided to make a tasty little sauce to go on top of the salmon with sweet blackberries, a little balsamic vinegar, a touch of orange juice and more. Come with me and I’ll show you how to make it.

Why You’ll Love this Salmon Recipe

  • The blackberry sauce has just the right amount of sweet and savory.
  • Balsamic vinegar and orange juice add nice tang and acidity to the dish.
  • Cardamom gives the sauce a delightfully unique flavor.
  • This recipe is not only guilt free, but one of the healthiest meals you can indulge in.
Prepared blackberry salmon recipe on white plate garnished with orange slice and zest

What’s in this Blackberry Salmon Recipe?

Salmon – Choose two filets, about 6 ounces each. I bake it with the skin on, but do not eat it.

Olive Oil – The olive oil is used to bake the salmon and sauté some of the sauce ingredients.

Blackberries – Choose berries that are as ripe as possible. When ripe, blackberries will be black in color without any red, but not mushy (overripe).

Balsamic Vinegar – This adds nice acidity and flavor to the sauce.

Orange Juice and Zest – I like to use fresh orange juice and then garnish the salmon with a little zest before serving.

Blackberry salmon recipe ingredients - shallot, garlic, orange, vinegar, blackberries, honey, brown sugar

Honey – This adds sweetness to the sauce.

Brown Sugar – For a little extra sweetness.

Garlic – You’ll just need 1 clove.

Shallots – For a little added flavor.

Cardamom – I use ground cardamom. It adds a unique and delicious flavor to the sauce.

Black Pepper – A little black pepper is added to the salmon prior to baking.

Salt – Lightly salt the salmon before baking and add just a pinch to the sauce.

How to make this Salmon Recipe

Make the Salmon

The first thing I do is preheat the oven to 400 degrees and line a baking sheet with foil.

Next, I brush a little olive oil on the foil underneath where I’ll add the salmon, so it doesn’t stick when it’s done baking.

I then add the two salmon filets on top of the oiled foil, brush the top with more olive oil and sprinkle the salmon with a little chunky salt and pepper.

I place the salmon in the oven and bake for 14-16 minutes until the center reaches 145 degrees.

salmon on foil being brush with olive oil with blue food brush

Make the Sauce

While the salmon is baking, I start on my sauce by adding the vinegar, orange juice, honey, brown sugar, cardamom, and pinch of salt to a bowl and mix the ingredients until combined.

Then, I heat about a Tbsp of olive oil in a skillet on medium heat, add the shallots and garlic to the pan, and sauté for about a minute.

Next, I add about 1 cup of the blackberries and the vinegar mixture to the skillet and begin immediately smashing the blackberries with the back of a large spoon. A serving spoon works well.

After smashing the blackberries, if the sauce is not already boiling, I bring it to a gentle boil and reduce the heat to simmer.

I then simmer and reduce the sauce for about 8 minutes, continuing to smash the blackberries and stirring occasionally.

Next, I gently stir in the last ¼ cup of blackberries and continue to cook the sauce for an additional 2 minutes, leaving the last of the blackberries whole. I love how pretty and tasty the sauce is with a few whole berries.

Garnish and Serve the Salmon

When the salmon is ready, I remove it from the oven and dish it onto the serving plates.

Lastly, I top each filet with half of the blackberry sauce. top it with a small orange slice and/or a little orange zest for garnish and dig in. Yum!

Blackberry salmon recipe instructions - make the salmon-make the sauce - add sauce to salmon - serve and enjoy!

What to serve with this Blackberry Salmon Recipe

There’s a lot you can serve alongside this dish. My goal when making something like this is to make side dishes that are simple (but tasty), that allow the main dish to remain the “star of the show.” Here are a few ideas:

Salad – A green side salad with a champagne or light fruity (but not too sweet) vinaigrette works well with this recipe.

Rice – Simple white rice with a butter or non-dairy buttery spread, salt and pepper is an option. This basic side dish allows the salmon to remain part of the show.

Potato – Mashed potatoes or baked potatoes always go well with salmon. I recommend keeping potato recipes simple.

Vegetable – Asparagus is a great choice alongside salmon. Chop the ends off the asparagus and add a little olive oil, garlic, salt, and pepper. Bake at 400 for 8 minutes. Add parmesan and continue roasting for an additional 2 minutes until the cheese is melted and the asparagus can be easily pierced with a fork.

Green beans are another option that can be roasted the same way as the asparagus but will need and additional 2-4 minutes of roasting time. Just add the parmesan 2 minutes before removing it from the oven

Bread – Bread served with oil, balsamic vinegar, sea salt and pepper goes for dipping is a great accompaniment. Butter or non-dairy buttery spread with the bread is another obvious option if that’s your preference.

Beverages – Nice red wine pairings include Malbec (my husband’s fav), Pinot Noir (there’s some great Oregon pinots), or Merlot. Ginger ale goes really well with the blackberry sauce as well. A simple sparkling water with lemon is another option.

Prepared blackberry salmon recipe on white plate garnished with orange slice and zest and surrounded by orange slices and berries

Making Ahead and Storing Leftovers

Making Ahead – You can make the sauce ahead of time, but I recommend baking the salmon fresh.

Storing Leftovers – Store leftover salmon and sauce separately in the refrigerator. Salmon is always best fresh. I usually cook it the day I purchase it, but you can store it for 1 day. The sauce is good in the fridge for 3 days and is also great on chicken.

Reheating Leftovers – Leftover salmon and sauce can be rewarmed in the microwave. The sauce can also be reheated in a skillet.

I hope you enjoyed making this blackberry salmon recipe with me. Let me know what you think in the comments below!

Healthy Zucchini and Yellow Squash Recipe that You’ll Love

Healthy Zucchini and Yellow Squash Recipe that You’ll Love

symbols for gluten free, dairy free and egg free

This simple zucchini and yellow squash recipe is healthy and delicious! You’ll love it as a side dish or an addition to other recipes.

Seasoned Zucchini and Yellow Squash cooking in skillet with fork.

If you haven’t had a sauteed zucchini and yellow squash recipe, I highly recommend you get on the bandwagon. Not only are these summer squashes extremely nutritious, but they’re also quite tasty when prepared properly! In fact, my hubby thought he didn’t like zucchini until I prepared this simple recipe for him and I’m proud to say he now actually requests it!

Come with me and I’ll show you why you’ll love it, what’s in the recipe, how to make it and more!

Why You’ll Love this Zucchini and Yellow Squash Recipe

  • You’ll love how quick and easy this recipe is to make.
  • These summer squashes are packed full of nutrients making them very good for you.
  • It’s exciting when healthy cuisine is also delicious.
  • The zesty seasoning is an enjoyable addition to this dish.
  • This recipe works well not only as a side dish, but as an added ingredient to other recipes.
raw zucchini and yellow squash sliced into "coins"

What’s in this Recipe?

Zucchini – Pick out a zucchini that has nice shiny green skin and is without bruises or too many blemishes. Avoid squash that is light weight or bends easily as it’s past it’s prime. You’ll want it to have a little weight to it and not be too big (under 8 or 9 inches).

Yellow Squash – I like to get straight neck yellow squash as the width is often similar to zucchini. Crooked neck yellow squash works well too, just cut it into small pieces when prepping as the body is more bulbous. Suggestions for picking out a nice yellow squash are the same as picking out a zucchini except you’ll be looking for nice yellow skin instead.

Olive Oil– You’ll sauté the squash in the skillet with olive oil.

Seasoning – There are a lot of options for seasoning. This recipe is a staple in our home and this is a great seasoning combination for the squash:

      • Garlic Powder
      • Onion Powder
      • Chili Powder
      • Paprika
      • Parsley Flakes
      • Cracked Black Pepper
      • Salt
Ingredients - Olive oil, yellow squash, spices in glass bowl, zucchini

How to make this Zucchini and Yellow Squash Recipe

First, I rinse and dry both squashes well.

Then, I chop the ends off and throw them away.

Next, I cut both the zucchini and yellow squash into “coins,” about a quarter inch thick. If there are larger piece, I chop them in half again creating “half coins.” My goal is to make the pieces somewhat close to the same size.

After all the chopping is done, I add all the seasoning to a small bowl and mix it together.

Next, I heat the olive oil in a medium-sized skillet on medium heat.

When the oil thins out and moves around the pan quickly and easily, but before it smokes, I add the squash. I quickly stir and spread out the “coins.”

Then, I quickly add the seasoning evenly over the squash and stir, shake and flip the pieces for a few minutes.

Next, to make sure it’s done, I pierce a piece or two of each squash with a fork. The fork should go in easily, but the squash should still have some structure to it (you do not want it to be mushy).

Lastly, I plate it up and dig in to this healthy and appetizing little squash recipe or add it to whatever else I’m making.

Making Ahead, Storing and Reheating Leftovers

Making Ahead

The squash is quick and easy to make, so I recommend serving it freshly cooked. I often chop the squash ahead of time or chop extra when making it and store it in a baggie in my vegetable drawer in the fridge. It stays fresh for a week plus.

Storing Leftovers

Although this side dish is best served fresh, you can safely store leftovers in the fridge for up to three days. Freezing the cooked squash is not recommended.

Reheating Leftovers

Leftovers can be rewarmed in the microwave. The amount of time needed to reheat the squash varies depending on how much you have leftover but be conservative on the amount of time you choose to maintain the best possible texture and avoid overcooking.
